Ingredients
- 2 lbs ground beef (80/20 recommended)
- 1 cup breadcrumbs (plain or seasoned)
- 1 cup milk
- 2 large eggs
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 tablespoon ketchup (for the mix)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
For the Glaze
- ½ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Instructions
- Preheat your oven to 375°F (190°C). Line a loaf pan or baking sheet with parchment paper.
- In a large bowl, combine the ground beef, breadcrumbs, milk, eggs, onion, garlic, Worcestershire sauce, 1 tablespoon ketchup, salt, pepper, and smoked paprika. Mix gently until just combined (do not overmix).
- Shape the mixture into a loaf and place it in the prepared pan.
- In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar for the glaze. Spread half of the glaze over the top of the meatloaf.
- Bake for 45 minutes, remove from the oven, and brush the remaining glaze on top.
- Return to the oven and bake for another 15 minutes or until the internal temperature reaches 160°F (71°C).
- Let the meatloaf rest for 10 minutes before slicing to allow the juices to settle.
