Ingredients

  • 2 lbs ground beef (80/20 recommended)
  • 1 cup breadcrumbs (plain or seasoned)
  • 1 cup milk
  • 2 large eggs
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon ketchup (for the mix)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika

For the Glaze

  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 375°F (190°C). Line a loaf pan or baking sheet with parchment paper.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, eggs, onion, garlic, Worcestershire sauce, 1 tablespoon ketchup, salt, pepper, and smoked paprika. Mix gently until just combined (do not overmix).
  3. Shape the mixture into a loaf and place it in the prepared pan.
  4. In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar for the glaze. Spread half of the glaze over the top of the meatloaf.
  5. Bake for 45 minutes, remove from the oven, and brush the remaining glaze on top.
  6. Return to the oven and bake for another 15 minutes or until the internal temperature reaches 160°F (71°C).
  7. Let the meatloaf rest for 10 minutes before slicing to allow the juices to settle.
