Ingredients

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into strips
  • 4-6 pita breads (or flatbreads)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ small red onion, thinly sliced
  • 1 cup shredded lettuce
  • ½ cup crumbled feta cheese
  • ½ cup Tzatziki sauce (store-bought or homemade)
  • Fresh dill or parsley for garnish (optional)

For the Marinade

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and black pepper.
  2. Add the chicken strips and toss to coat. Marinate for at least 30 minutes (or up to 2 hours) in the refrigerator for maximum flavor.
  3. Heat a grill pan or skillet over medium-high heat. Cook the chicken for 4-5 minutes per side, or until fully cooked and slightly charred.
