Ingredients

  • 3 cups cooked shredded chicken (rotisserie works great)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 ½ cups BBQ sauce (your favorite brand)
  • 12 Hawaiian sweet rolls
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon sesame seeds (optional for topping)
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a baking dish large enough to fit the Hawaiian rolls.
  2. In a mixing bowl, combine shredded chicken, BBQ sauce, and pineapple chunks. Stir until evenly coated.
  3. Slice the Hawaiian rolls in half horizontally (keeping them attached). Place the bottom halves in the prepared baking dish.
  4. Spoon the BBQ chicken mixture evenly over the bottom halves of the rolls. Sprinkle with shredded cheese.
