BBQ Pulled Pork Sandwiches

Ingredients
- 4 lbs pork shoulder (Boston butt)
- 1 large onion, sliced
- 2 cups BBQ sauce (your favorite brand)
- ½ cup apple cider vinegar
- 2 tablespoons brown sugar
- 1 tablespoon smoked paprika
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper, to taste
- 12 sandwich buns or brioche rolls
- Optional: coleslaw for topping
Instructions
- Prepare the pork: Season pork shoulder with salt, pepper, smoked paprika, chili powder, garlic powder, and onion powder. Rub evenly on all sides.
- Slow Cooker Method: Place sliced onion at the bottom of the slow cooker. Add seasoned pork on top. Pour apple cider vinegar and 1 cup of BBQ sauce over the meat. Cover and cook on low for 8 hours or high for 6 hours until tender.
- Oven Method: Preheat oven to 300°F (150°C). Place pork in a roasting pan with onions and liquid. Cover tightly with foil and bake for 3 hours or until meat is fork-tender.
- Remove pork and shred with two forks. Discard excess fat. Mix shredded pork with remaining BBQ sauce.
- Toast buns lightly for extra flavor and texture.
- Assemble sandwiches with pulled pork and top with coleslaw if desired.
