Ingredients

  • 8 oz rice noodles or thin spaghetti
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded purple cabbage
  • ½ cup chopped cilantro
  • ¼ cup chopped green onions
  • ½ cup roasted peanuts, chopped
  • Lime wedges, for serving

For the Peanut Sauce

  • ½ cup creamy peanut butter
  • 3 tablespoons soy sauce (low sodium)
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2-3 tablespoons warm water (to thin the sauce)
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • ¼ teaspoon crushed red pepper flakes (optional, for heat)

Instructions

  1. Cook noodles according to package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.
  2. In a medium bowl, whisk together all the peanut sauce ingredients until smooth. Add more warm water if needed to reach a pourable consistency.
  3. In a large mixing bowl, combine cooked noodles, carrots, bell pepper, cabbage, and half the cilantro and green onions.

  5. Serve in bowls topped with chopped peanuts, remaining cilantro, green onions, and lime wedges.
